Gluten Free Fruit Cake made using Bin Inn's Gluten Free Cake & Biscuit Mix.

350g Bin Inn Gluten Free Cake & Biscuit Mix
750g Fruit Mix
400ml Warm Water or Gingerale
3 Eggs, beaten
4 tsps Gluten Free Baking Powder
1 tsp Mixed Spice
Soak the fruit mix in water or gingerale overnight. Mix in the Gluten Free Cake & Biscuit Mix, beaten eggs, baking powder and mixed spice. Place in a 23cm round cake tin lined with baking paper. Bake at 165Ãƒâ€šÃ‚Â°C for about 1 1/2 hours or until cooked. To check if cake is ready, insert a knife, it should come out clean.
