Hummus is a quick and easy Middle Eastern dish that is delicious served as a dip with assorted breads.

250g Chickpeas - soaked & drained
1.2 Litres Water
1 Clove Garlic
4 tsps Tahini (Sesame Seed Paste)
1/4 tsp Paprika
1/4 tsp Ground Cumin
Pinch Salt & Pepper
Few Drops Olive Oil
1. Simmer chickpeas or cook in a pressure cooker until soft. Drain chickpeas and retain the cooking liquid.
2. Mash chickpeas. Rub through a sieve, discarding the skins or skin them. Blend in a food processor and slowly add the cooking liquid according to desired consistency.
3. Add tahini, garlic, salt and pepper and a squeeze of lemon juice. Stir and taste. Add more tahini and/or lemon juice according to taste preference.
4. Pour into a bowl and swirl around the top with a fork. Sprinkle with paprika, cumin and a few drops of olive oil.
Serve with a selection of fresh breads or toasted breads or pita bread.
