Ingredients
500g Christmas Cake or Heavy Fruit Cake
1/2 Cup Dark Rum
250g Dark Chocolate
1 Cup Desiccated Coconut
Instructions
1. Place Christmas cake and dark rum into a food processor and blend until combined.
2. Leave to stand for 30 minutes in the fridge.
3. Roll mixture into balls.
4. Slowly melt chocolate.
5. Coat balls in the melted chocolate and roll in desiccated coconut.
6. Place on a tray and chill in the fridge before serving.
