Gluten Free Banana Cake

 Bin Inn Gluten Free Banana Cake

INGREDIENTS

  • 320g (1 & ¾ Cup) Bin Inn Gluten Free Flour Mix
  • 1 tsp Cinnamon
  • 125g Butter
  • ½ cup Milk
  • ½ cup Sugar
  • ½ tsp Bin Inn Gluten Free Baking Soda
  • 3 Eggs
  • 2 tsp Bin Inn Gluten Free Baking Powder
  • 1 cup Mashed Bananas (about 2 large bananas)
  • 1 tsp Vanilla Essence

INSTRUCTIONS

  1. Preheat your oven to 180°C (350°F). Line a 23cm round tin with baking paper.
  2. In a bowl, melt the butter.
  3. Add the sugar, eggs, and vanilla to the melted butter and mix well until smooth. Once mixed, add the milk.
  4. In a separate bowl, combine the Bin Inn Gluten Free Flour Mix, cinnamon, Bin Inn Gluten Free Baking Powder, and Bin Inn Gluten Free Baking Soda.
  5. Gradually add the dry ingredients to the wet mixture, whisking thoroughly to combine.
  6. Fold in the mashed bananas until well incorporated.
  7. Pour the batter into the prepared tin and smooth the top.
  8. Bake for 40–50 minutes, or until a skewer inserted into the centre of the cake comes out clean.
  9. Leave the cake in the tin for 10 minutes before transferring it to a wire rack to cool completely.
