200g Dried Fruit Mix (e.g., raisins, currants, sultanas)
1 tbsp Oil
1 tbsp Sugar
1–2 tsp Mixed Spice Paste for Cross:
50g Bin Inn Gluten Free Bread Mix
1–3 tbsp Water Glaze:
½ cup Water
¼ cup Sugar
INSTRUCTIONS
Preheat your oven to 210°C
In a mixing bowl, combine the bread mix, sugar, oil, mixed spice, and water. Mix thoroughly with a cake mixer on high for about 1 minute, or by hand for 2 minutes, until well combined.
Stir in the dried fruit mix.
Half-fill greased muffin pans with the dough mixture. Cover and leave the pans in a warm place to rise while preparing the cross mixture.
In a small bowl, combine the remaining 50g bread mix with just enough water to make a smooth paste. Transfer the paste into a piping bag with a small nozzle and pipe a cross over the top of each bun.
Bake the buns for about 20–25 minutes, or until golden brown.
While the buns are baking, prepare the glaze. In a saucepan, bring the water and sugar to a boil, stirring to dissolve the sugar. Allow to cool slightly.
Once the buns are baked, remove them from the oven and place them on a wire rack to cool. While they are still warm, brush the buns with the sugar glaze to give them a shiny finish.
