Instructions:
- Combine yeast, sugar, and 1/2 cup water. Let sit for 5 minutes. Mix with flour, salt, and slowly add the remaining water until a the dough holds together.
- Knead by hand for 10 minutes until smooth adding small amounts of flour as needed, until the dough feels firm and smooth. Alternatively if you have a mixer use a dough hook on medium speed for 5-6 minutes, until the dough is elastic but not sticky.
- Shape the dough into a ball, place it in a lightly greased bowl, and cover with a clean towel or plastic wrap. Let it rise in a warm spot for about 1 hour or until doubled in size.
- Punch down the dough and divide it into 8 even pieces. Roll each piece into a ball, then use your thumb to press a hole in the center. Gently stretch the hole to about half the diameter of the bagel. Arrange the bagels on a lined or greased baking sheet, cover with a damp cloth, and let them rest for 15 minutes.
- Preheat your oven to 220°C. Bring a large pot of water to a gentle boil. Carefully place a few bagels into the water and let them cook for 1-2 minutes on each side. The longer they boil, the chewier they will be. Use a slotted spoon to transfer the bagels back to the baking sheet.
- Bake for 15-20 minutes, or until they are golden brown. Transfer to a wire rack to cool completely before serving.
