Grain-Free Porridge

INGREDIENTS

Makes 1 serving

  • 1/4 cup raw pumpkin seeds
  • 2 Tbsp flax/linseeds
  • 1 Tbsp chia seeds
  • 2 Tbsp unsweetened shredded coconut
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp vanilla extract
  • 1/2 cup warm dairy-free milk of choice

INSTRUCTIONS

  1. Blend pumpkin seeds, flax seeds, chia seeds, and shredded coconut until fine.
  2. Place in a serving bowl.
  3. Add warm milk, cinnamon, ginger, and vanilla extract. Stir well.

Serving Suggestions: Add allspice or garam masala for extra flavour. Sweeten with honey or stevia. Top with sliced bananas, apples, or shredded coconut.
