Thyme Crackers

INGREDIENTS

  • 125g butter, room temperature
  • ¼ tsp freshly ground black pepper
  • 1 heaped tbsp fresh thyme leaves, chopped
  • 2 tbsp milk
  • 110g Bin Inn Gluten Free Flour
  • 50g grated Parmesan cheese
  • ½ tsp smoked garlic salt
  • ⅛ tsp cayenne pepper
  • 60g gluten free cornflour
  • 80g grated cheddar cheese

INSTRUCTIONS

  1. Beat the butter until light and fluffy. Add the smoked garlic salt, black pepper, thyme, and cayenne pepper, and beat until combined.
  2. Stir in the Parmesan and cheddar cheeses. Add the milk and mix well.
  3. Add the Bin Inn Gluten Free Flour and cornflour, and mix until the dough comes together.
  4. Shape the dough into a sausage, wrap in baking paper, and chill in the fridge to firm up.
  5. After chilling, slice the dough into thin pieces and place on trays lined with baking paper.
  6. Bake at 180°C for about 15 minutes, or until the crackers are slightly golden. Cool on a rack.

These crackers freeze well. Enjoy!
