Chocolate Protein Balls

INGREDIENTS

Makes 8-12 bars or balls

  • 6 tablespoons almond butter (or nut butter of choice)
  • 4 tablespoons raw cacao
  • 2 tablespoons cold-pressed coconut oil
  • 1 tablespoon ground linseeds, chia seeds, or almond meal
  • 1 large scoop of your favourite paleo protein powder
  • 1 tablespoon raw honey or 5 drops of stevia
  • Pinch of sea salt
  • Water (as needed)
  • Shredded coconut (for coating)

INSTRUCTIONS

  1. Combine all the ingredients in a large bowl and mix thoroughly. If the mixture is too dry, add water one tablespoon at a time until it reaches the desired consistency. If it’s too wet, place it in the fridge to firm up.
  2. Mould the dough into small balls, then roll each ball in shredded coconut. Alternatively, you can dust them with additional cacao for an extra antioxidant boost.
  3. For bars, press the mixture into a small loaf pan lined with baking paper and refrigerate until firm. Once set, cut into your desired bar sizes.
