Line a baking tray with baking paper and set aside.
In a medium saucepan, add sugar and golden syrup and gently heat over low medium heat, stirring just until the sugar has melted.
Once the sugar has dissolved, stop stirring. Let the mixture bubble for about 2 minutes. Keeping an eye on it, you want it to turn a rich golden colour but not burn.
Remove from the heat and quickly whisk in the baking soda. The mixture will foam up immediately – that’s the magic!
Immediately pour the foamy mixture onto your prepared tray. Don’t spread it, just let it settle.
Leave it to cool completely (about 30 minutes), then break into chunks.
