Super Seed Muesli

INGREDIENTS

  • 1 1/4 cups coconut milk or cream
  • 1/4 cup raw pumpkin seeds
  • 1/2 cup ground flax/linseeds
  • 2 Tbsp unsweetened shredded coconut
  • 1/4 cup sunflower seeds
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp vanilla extract
  • 1 tsp coconut oil

INSTRUCTIONS

  1. Heat coconut milk in a saucepan over medium-low heat for 2-3 minutes.
  2. Stir in vanilla, cinnamon, ground ginger, and coconut oil.
  3. In a bowl, combine sunflower seeds, pumpkin seeds, flax seeds, and shredded coconut.
  4. Pour warm mixture over dry ingredients and mix well.
  5. Serving Suggestions: Add stevia or honey to taste. Top with fresh berries.
