Almond Pancakes

INGREDIENTS

Makes 1-2 servings

Ingredients:

  • 1/2 cup almond flour
  • 2 eggs
  • 1 tsp pumpkin pie spice or cinnamon
  • 1 Tbsp ground linseed/flaxseed
  • Unsweetened almond, coconut, rice, or hemp milk (adjust for thickness)
  • 2 Tbsp coconut oil

INSTRUCTIONS

  1. Blend all ingredients in a high-speed blender.
  2. Heat a griddle or frying pan over medium heat.
  3. Pour about 1/3 cup of batter per pancake.
  4. Flip when bubbles form and edges look slightly dry.
