Gluten Free Chocolate Roughies

 Bin Inn Chocolate Roughies

INGREDIENTS

  • 200g Bin Inn Gluten Free Flour
  • 2 tbsp cocoa powder
  • 1 tsp Bin Inn Gluten Free Baking Powder
  • 200g butter
  • 60g sugar
  • 60g gluten-free cornflakes
  • 1 tsp vanilla essence

INSTRUCTIONS

  1. Preheat the oven to 175°C.
  2. Mix the Bin Inn Gluten Free Flour, cocoa powder, and Bin Inn Gluten Free Baking Powder together in a bowl.
  3. Cream the butter, sugar, and vanilla essence until smooth. Add the dry ingredients to the butter mixture and blend well.
  4. Stir in the gluten-free cornflakes.
  5. Spoon the mixture onto a lined baking tray, spacing the spoonful’s well apart. Press them down lightly, but don't flatten completely.
  6. Bake for 12-15 minutes, until the surface cracks slightly.
  7. Let them cool on the tray for a few minutes before transferring to a cooling rack.
  8. Optional: Decorate with chocolate icing and a walnut on top for extra flair.
