Gingernut Biscuits

 Bin Inn Gluten Free Gingernut Biscuits

INGREDIENTS

  • 400g Bin Inn Gluten Free Flour Mix (replaces Cake & Biscuit Mix)
  • 100g butter
  • 1 tbsp golden syrup
  • 1 tsp Bin Inn Gluten Free Baking Soda
  • ¾ cup sugar
  • 3 tsp ground ginger
  • 1 egg

INSTRUCTIONS

  1. Preheat your oven to 180°C (160°C fan bake). Line baking trays with parchment paper or lightly grease them.
  2. In a bowl, melt the butter. Once melted, add the golden syrup and warm slightly to soften.
  3. Stir in the sugar and beat in the egg until well combined.
  4. Add the Bin Inn Gluten Free Flour Mix, Bin Inn Gluten Free Baking Soda, and ground ginger to the bowl. Mix thoroughly to form a dough.
  5. Roll the dough into small balls (about the size of a walnut), then flatten them slightly with the back of a spoon or your fingers.
  6. Place the ginger nuts on the prepared baking trays, leaving space between them for spreading during baking.
  7. Bake for 10-15 minutes, or until lightly browned.
  8. Allow the ginger nuts to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
